Keto Cheesy Cauliflower ‘Breadsticks’

We all know that sticking to a keto lifestyle doesn't mean sacrificing flavor or fun in the kitchen. That's why we're thrilled to share this recipe that's not only low-carb and keto-friendly but also bursting with cheesy goodness and crispy edges that will leave you craving seconds (and thirds).

Ingredients: 

  • 1 medium head cauliflower, cut into florets 

  • 2 large eggs 

  • 2 cups shredded mozzarella cheese 

  • 1/4 cup grated Parmesan cheese 

  • 1 teaspoon dried oregano 

  • 1 teaspoon garlic powder 

  • Salt and pepper, to taste 

  • Marinara sauce for dipping (optional) 

Instructions: 

  • Preheat your oven to 425°F/ 220°C. Line a baking sheet with parchment paper or lightly grease it. 

  • Place the cauliflower florets in a food processor and pulse until they resemble fine crumbs. 

  • Transfer the cauliflower crumbs to a microwave-safe bowl and microwave on high for 5-6 minutes, or until softened. Allow the cauliflower to cool slightly. 

  • Once the cauliflower has cooled, place it in a clean kitchen towel and wring out as much moisture as possible. 

  • In a large mixing bowl, combine the cauliflower crumbs, eggs, shredded mozzarella cheese, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper. Mix until well combined. 

  • Transfer the cauliflower mixture to the prepared baking sheet and spread it out evenly, forming a rectangle about 1/4 inch thick. 

  • Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the breadsticks are firm to the touch. 

  • Remove the baking sheet from the oven and let the cauliflower breadsticks cool for a few minutes. 

  • Using a sharp knife, slice the cauliflower breadsticks into strips. 

  • Serve the keto cheesy cauliflower breadsticks warm, with marinara sauce for dipping if desired.
