Keto Cheesy Cauliflower ‘Breadsticks’

Ingredients:
1 medium head cauliflower, cut into florets
2 large eggs
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and pepper, to taste
Marinara sauce for dipping (optional)
Instructions:
Preheat your oven to 425°F/ 220°C. Line a baking sheet with parchment paper or lightly grease it.
Place the cauliflower florets in a food processor and pulse until they resemble fine crumbs.
Transfer the cauliflower crumbs to a microwave-safe bowl and microwave on high for 5-6 minutes, or until softened. Allow the cauliflower to cool slightly.
Once the cauliflower has cooled, place it in a clean kitchen towel and wring out as much moisture as possible.
In a large mixing bowl, combine the cauliflower crumbs, eggs, shredded mozzarella cheese, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper. Mix until well combined.
Transfer the cauliflower mixture to the prepared baking sheet and spread it out evenly, forming a rectangle about 1/4 inch thick.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the breadsticks are firm to the touch.
Remove the baking sheet from the oven and let the cauliflower breadsticks cool for a few minutes.
Using a sharp knife, slice the cauliflower breadsticks into strips.
Serve the keto cheesy cauliflower breadsticks warm, with marinara sauce for dipping if desired.
