Keto Avocado and Bacon Stuffed Eggs

Ingredients: 

  • 6 hard-boiled eggs, peeled and halved lengthwise 

  • 1 ripe avocado 

  • 4 slices of cooked bacon, crumbled 

  • 2 tablespoons mayonnaise 

  • 1/4 teaspoon of sumac

  • 1 tablespoon lime juice 

  • Salt and pepper to taste 

  • Chilli powder to taste

  • Optional garnish: chopped fresh chives or paprika. Can also add pomegranate too for a fresh pop.

Instructions: 

  • Boil eggs for up to 12 minutes for hard-boiled eggs

  • Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and set the egg whites aside. 

  • Cut the avocado in half, remove the pit, and scoop the flesh into the mixing bowl with the egg yolks. 

  • Mash the egg yolks and avocado together until smooth and creamy. 

  • Add the mayonnaise, lime juice, salt, sumac, chili, and pepper to the bowl. Mix until well combined and smooth. 

  • Taste the mixture and adjust the seasoning if necessary. 

  • Spoon the avocado mixture into the hollowed-out egg whites, dividing it evenly among them. 

  • Garnish each stuffed egg with crumbled bacon, chopped fresh chives, and or a sprinkle of paprika for extra flavor and presentation. 

  • Arrange the stuffed eggs on a serving platter and serve immediately, or refrigerate until ready to serve.
